Chinese New Year 2025 Feasting and Gathering Steam Boat Recipe
INGREDIENTS & METHOD FOR STEAM BOAT BROTH:
Chinese cabbage
Salt & Pepper
Bring a big pot of water to the boil with the chicken carcasses. Slice and add the cabbage, salt and pepper and let this simmer for 2-3 hours. If you have a thermopot you can leave it to work overnight.
If you are vegetarian, you can use vegetable broth.
INGREDIENTS TO COOK IN THE STEAM BOAT:
Here is a typical array but in reality you can prepare whatever you like. We prepare and plate each ingredient on a separate plate.
Meat balls (you can get these at your local Asian supermarket)Sliced pork
Sliced chicken
Sliced fish
Sliced pork liver and kidney if you like those (my Dad's fav!)
Quails eggs boiled and shelled
Eggs boiled and shelled
Lettuce leaves
Dumplings (again you can get these at your local Asian supermarket)
Watercress or any green easy to cook veggie
Rice noodles or egg noodles ready blanched
And if you are vegetarian, you can slice up your favourite vegetables, bean curd, to cook in the pot.
CONDIMENTS TO SERVE WITH THE STEAMBOAT:
Chopped garlic fried in oil
Shallots fried in oil
Soya sauce
Cut Chilli
UTENSILS YOU WILL NEED FOR EACH PERSON:
ChopsticksChinese spoon
A bowl and a plate for under the bowl
A small saucer to put the soya and chilli
METHOD TO COOK IN THE STEAM BOAT:
The idea is to put the various ingredients into the broth in the steamboat. Then cover the lid and let it come to be boil, then all are cooked. Sprinkle the fried garlic in oil and shallots in oil to finish it off.
Then the liver and kidney we put in last, usually we have a spoon that is like a net so you put these quick cook things inside and pop into the soup to cook. Then we each help ourselves to a bowl of goodies. Then we repeat this till we are full!
