UMAMU Estate Sparkling with Oysters three ways
Ingredients & method:
Oysters:
3 dozen oysters
1. Lime marmalade, pickled ginger & chives:
2T Rose’s Lime marmalade
1T chives finely chopped
1T Japanese pickled ginger finely chopped
2T white balsamic vinegar
Pinch black pepper
(Combine all ingredients and spoon 1/2 teaspoon of mixture on each oyster)
2. Blood orange, eschallot, shiso leaf:
1 blood orange, segmented, finely diced
1/2 small eschallot finely chopped
1T honey
5 shiso leaves finely torn (or substitute purple basil)
1T white wine vinegar
(Combine all ingredients and spoon 1/2 teaspoon of mixture on each oyster)
3. Mango, coriander, chilli:
1/2 mango cheek finely diced
1T coriander finely chopped
1 small red chilli deseeded, finely diced
1T white wine vinegar
(Combine all ingredients and spoon 1 teaspoon of mixture on each oyster)
