"On lees for 15 months. Disgorged in October 2020. 4g/l dosage. Made from Semillon grapes and highly perfumed with lemon lime cordial. Elderflower and golden kiwifruit. Shaved fennel, green apple skin and lime curd. Buttered toast, wild lime pickle and caper berry. Traditional method sparkling Semillon isn't something you come across often and the results are unique. A touch herbal, nuances of oak and cheesy leesy. The dynamic flavours of Semillon as it develops in complexity adds a exotic fragrance and acidity is perky and driving. I’d say a raw kingfish with jalapeno and ponzu would be a very nice pairing indeed." 90 points The Wine Pilot Shanteh Wale

"Is there anything better than sparkling and seafood to bring in the festive season? If so, I haven't found it yet. UMAMU with their 2019 MacAnn Sparkling. A delicate yet lively Semillon sparkling. It worked wonder next to a bowl of prawns that's for sure. Very lively on the nose. Initially, quite grassy, although nicely refined by citrus rinds. Pale straw, with minuscule delicate bubbles. Fresh and energetic on the palate. Citrus, melon, and some nice brioche. Very tasty stuff. A nice dry finish to wrap everything up. Take the seafood out of the equation, and this is an extremely tidy and elegant sparkling. Happy drinking."
Appearance: A clear vibrant pale straw. Alive beads.
Nose: Refined with citrus notes.
Palate: Fresh, elegant & refined, a drier crisp style with good length. Snow peas with royal gala apples.
