Huon Hooke

"Medium to full red colour with a purple tinge, lighter than cabernet sauvignon but typical of this grape, while the bouquet has herbal and crushed blackcurrant aromas, the palate lean and medium-bodied at most with crushed-leaf and blackcurrant flavours. The tannins are mild and yet impart a certain firmness to the texture. A very appealing medium wine with typical varietal flavours."

Dear UMAMU family,

We are continuing to explore in our winemaking, and are excited to offer this 100% Margaret River Cabernet Franc.

Single-parcel fruit, with vines planted in 2001. Our Margaret River Cabernet Franc is about perfume and delicacy. We approached it by having an open canopy all the growing season so the fruit received gentle dappled light, which assisted with the growth of supple tannins and fragrant berry perfumes.

We harvested at moderate ripeness, then slightly split each berry before a 25°C ferment for 10 days. A gentle pressing, then to second use oak for 10 months. We chose the second use barrels as they were ideal for the feminine perfumes and delicate structure of the wine.

Cheers!
